Savory grain free muffin

Suited well to serve alongside a soup or as a snack for those mid afternoon nibbles.


Ingredients:

3 eggs
300 grams of pepita meal
150 grams of grated zucchini
1/2 a teaspoon of salt
60 grams of ghee
50 grams of sunflower seeds
50 grams of sundried tomatoes (optional)
50 grams of fried bacon bits (optional)
6 olives sliced (optional)

Method:
Beat eggs for 4 minutes or until foamy.
Add pepita meal, zucchini, salt, ghee and sunflower seeds.
Mix well until combined.
Spoon mixture into a lined muffin tin.
Baked for 20 minutes or until a skewer comes out clean
