Have some simple recipes that are really easy to make but also make your taste buds tingle is a great thing to have.
Did you know that homemade mayonnaise is actually dairy free - naturally!
Ingredients:
1 whole egg
1 cup of olive oil
1 tablet spoon of white vinegar OR fresh lemon juice
1/4 teaspoon on mustard
salt and pepper to taste
a little if needed to taste
Method
Blend together for a few seconds - egg, lemon juice(or vinegar), mustard and salt and pepper.
While the machine is still running slowly add a fine stream of olive oil.
Be mindful not to add the oil to quickly and adding the oil should take longer than a minute.
The mayonnaise will thicken as it blends.
Some suggestions of how to use your mayonnaise:
#1 Use as a base for a tartar sauce by; adding 1/2 cup of chopped pickles and 1/4 cup of chopped onion
#2 Use as a mock Hollandaise sauce; by adding grated cheddar cheese (if tolerated), then you can spread over vegetables such as cooked cauliflower and broccoli.(cover and then heat in the oven)
#3 Use to thicken gravy; by adding 2 tablespoons of mayonnaise to about 1 cup of meat stock and heat gently for 1-2 minutes stirring constantly.
