Coconut flour cake with frosting

Coconut flour can be a little temperamental if you are new to cooking with it but have tested recipes is always a great place to start.
Both of these recipes are GAPS friendly!




Ingredients:
1 1/4 cup of coconut flour
1 teaspoon of celtic sea salt
1/2 teaspoon of baking soda
8 large eggs
2/3 cup of ghee - melted
1 cup of raw honey
2 tablespoons of vanilla extract


Method:

Preheat oven to 175 degrees Celius
Grease to 8 inch cake tins and then dust with coconut flour

Mix dry ingredients together - coconut flour, salt, baking soda.
In a different bowl whisk together wet ingredients - eggs, ghee, honey and vanilla extract.

Add wet ingredients to dry ingredients and blend together.

Divide mix between to two cake tins
Bake for 30-40 minutes until a skewer comes out dry.


Frosting:

1 1/2 cups of cashews
1 cup of water
2 teaspoons of vanilla
7 pitted dates
a pich of salt.

Mix all ingredients in a high speed blender until it makes a thick cream.
