ANZAC Biscuits with Oats

Ingredients:
  • 1 cup rolled oats
  • 1 cup desiccated coconut
  • 1 cup almond meal
  • 60 grams of honey
  • ¼ cup melted unsalted butter
  • 1 teaspoon vanilla extract
  • ¼ teaspoon sea salt




Instructions:
  1. Preheat the Oven: Set your oven to 150°C (300°F). Line a baking tray with parchment paper.
  2. Combine Dry Ingredients: In a mixing bowl, combine the rolled oats, desiccated coconut, almond meal. Stir until evenly mixed.
  3. Prepare Wet Ingredients: In a small saucepan, melt the butter over low heat. Remove from heat, then add the honey and vanilla extract, stirring until smooth.
  4. Mix Wet and Dry Ingredients: Pour the wet mixture into the bowl of dry ingredients, stirring until all ingredients are well combined. The mixture should be slightly sticky but manageable.
  5. Shape and Bake: Roll tablespoons of the mixture into balls, place them on the lined baking tray, and press each one gently to flatten slightly. Leave space between each biscuit.
  6. Bake: Bake for 15-18 minutes, or until the biscuits are golden brown. They will firm up as they cool.
  7. Cool and Enjoy: Let the biscuits cool completely on the baking tray before transferring them to an airtight container. Enjoy your homemade ANZAC biscuits!
