Banana Bread


If you are like me then sometime you get carried away buying fresh produce as it look so good when you are buying it. One of these foods is bananas and they generally get eaten pretty quickly. But for the odd time that they don't it is handy to have a recipe to use them up that is super tasty!

​Ingredients:

  • 3 large ripe bananas, mashed

  • 2 eggs

  • 2 teaspoons pure vanilla extract

  • 2 tablespoons pure maple syrup

  • 2 cups finely ground almond flour

  • 5 tablespoons tapioca flour

  • 1 teaspoon baking powder

  • 1/4 teaspoon sea salt

  • 2 teaspoons ground cinnamon

  • ¼ teaspoon ground nutmeg (optional)

Method

  1. Preheat the oven to 350 degrees F and line a 9" x 5" loaf pan with parchment paper.

  2. Add all of the ingredients for the banana bread to a blender. Blend until completely smooth.

  3. Pour banana bread batter into the prepared loaf pan and use a spoon or spatula to spread the batter into an even layer.

  4. Bake for 50 to 55 minutes on the center rack of the preheated oven, until the edges of the bread are golden-brown. Turn off the oven and allow bread to sit in the still-warm oven another 10 minutes.

  5. Allow bread to cool for 30 minutes before releasing it from the loaf pan and cutting into slices.

  6. Cut thick slices of bread and enjoy!
