Muesli snack bars

Getting the kids involved in making and contributing to the snacks that they eat means that they are much more likely to eat them. Giving them a sense of pride in the food and a greater understanding that great food takes time to make, and doesn't just fall out of a packet.

This a a quick and easy recipe that can be made to look even better with an addition of a light coating of chocolate and some dried berries.

Ingredients (12 SLICES)

3 cups (350g) natural bircher muesli ½ cup (50g) LSA – (ground linseed + almonds + sunflower seed) 3 organic eggs 1 teaspoon vanilla extract or paste ½ teaspoon ground cinnamon 1/4 cup (60 ml) coconut oil 1/4 cup (60 ml) maple syrup

Method

Preheat oven to 180 C

Combine muesli, LSA, eggs, vanilla, cinnamon, coconut oil and maple syrup in one large bowl until mixed through.

Spoon into a baking tin lined with baking paper.

Bake for 25 – 30 minutes until golden.

Cool then cut into 16 pieces.
